Spicy Chicken with Ginger, Citrus, and Soy – A Storm of Flavors!

INGREDIENTS
(Serves 4 as a main, or 6 with two side dishes)
Chicken (700g boneless, skinless chicken thighs)
1 tbsp cornstarch
1 tbsp oil (sesame oil is even better)
Salt and pepper to taste
For the marinade/sauce
3 tbsp soy sauce (low sodium soy sauce can be used)
2 tbsp lemon juice (about 1 lemon)
3 tbsp orange juice (about 1 medium orange)
1 tbsp vinegar
1.5 tbsp brown sugar or honey
1 tbsp grated fresh ginger
3 cloves garlic – minced
1-2 red chillies – finely chopped
Lemon and orange zest – grated
Optional – 1 tsp fish sauce Sauce (for more umami)
For garnish
Chopped scallions
Roasted sesame seeds
Fresh coriander
Finely chopped red chilies (for extra heat)
INSTRUCTIONS

Marinate the chicken
Mix the chicken pieces with cornstarch, salt, and pepper. This will give them a golden color in the pan. It will also help the sauce thicken less. Set aside for 10–15 minutes.

Make the sauce
In a bowl, combine the soy sauce, lemon juice, orange juice, vinegar, brown sugar, ginger, garlic, and chili flakes and mix well. Add the zests mentioned above. Add fish sauce if desired.
Finally, taste and adjust: add more lemon juice if you want it more tangy, or sugar if you want it sweeter.

Fry the chicken
Heat a wok or skillet over medium heat and add oil. Once the oil is hot, add the chicken pieces. Add in a single layer, preferably in batches.
Let them cook for 2-3 minutes until golden brown. Then mix and fry for another 3-4 minutes. Once the chicken is fully cooked, remove from the pan and set aside.

Cook the sauce
Pour the sauce mixture into the same pan. Scrape up any bits that stick to the pan and mix – these are the real flavour. Simmer the sauce – for about 3–4 minutes, until it thickens slightly.

Finish cooking
Put the cooked chicken back into the pan and toss well in the sauce. Simmer for another 2–3 minutes – so that the chicken absorbs all the flavour.
That’s it! Taste and add water, salt or pepper as required.
